Simple oat cookies

Morning again!

I thought I’d post another recipe today, something very simple and, in my opinion, very tasty. The recipe is available here but I will tell you little about it. Basically it’s cookies made with oats and bananas, the original recipe uses gluten free oats so if you have a gluten free diet you can make these as well, but I just used regular supermarket value oats. The magic ingredient is the bananas, mashed ripe bananas hold the mixture together so you can bake them. That’s all you need, mashed bananas and oats, I told you it was simple! The recipe suggests that you can add other ingredients to the mixture, coconut, chocolate, peanut butter. I imagine you could add anything you wanted to. I chose to add a couple of spoonfuls of crunchy peanut butter to mine and they were amazing. The only setting which works on my oven (I can’t wait to move house) is where it cooks from the bottom, so my cookies weren’t cooked evenly and were left with crunchy bottoms and soft tops but I didn’t mind, they were still delicious. Also, I didn’t bother shaping them properly so they are a little jagged. Another thing I like about this recipe is that it’s quick to make and quick to cook, so if you fancy something sweet you can have it in twenty minutes with minimal fuss. I also had non-vegan friends try these and they thought they were delicious.
