How has your week been? Today I’m posting a very quick and simple sausage pasta recipe that I made not that long ago.
I used the remaining Tofurky sausages, basic pasta, a basic tin of tomatoes and some seasoning. I cooked the pasta and sauce in separate pans, cooked the tomatoes for a few minutes before adding the sausage and seasoning. Once the sauce was bubbling I added the cooked and drained pasta and mixed together. Voila! I know that the sauce isn’t quite the same as a proper Italian tomato sauce but I find those thick and very rich tomato sauces a little too much, this is my perfect compromise. The sausages were very moist and added something a little special to an otherwise basic dish.

Sausage pasta is one of my fave quick meals 🙂 I usually use Linda McCartney sausages but I’d like to try the Tofurky ones!

This looks delicious! I love adding things to pasta that aren’t just sauces and cheese! I haven’t tried it with sausages yet…will have to give it a go.
